Slow Cooker Pulled Chicken

Cook the following ingredients for 4 hours on high or 8 hours on low in a slow cooker, until chicken is cooked through and tender.

7 chicken breasts, raw and seasoned with salt and pepper

2 tablespoons olive oil

2 celery stalks

4 carrot sticks

1 onion or shallot, peeled and halved

         4 garlic cloves, peeled and smashed  

2 bottles wheat beer, such as Blue Moon

2 cups chicken stock

1 chipotle pepper (optional)
